Today we learn how to create the perfect cheese board. Svetlana Redpath from The Guid Cheese Shop in St Andrews gives her thoughts on how to prepare a cheese board or cheese plate.

Ultimately you want to include as much variety as possible from the cheese world. This means including different textures, milks and flavours. Thus you could include cow’s milk, sheep’s milk, goat’s milk, soft, semi firm, hard and cheese blue.

Alternatively you can base your cheese plate on different textures from the one kind of milk, for example five cheeses all made from sheep’s milk.
